Garam Masala

Serves 1 cup
Ingredients
4 tsp cardamom seeds 4 tsp black peppercorns
Two 7.5cm cinnamon sticks 3 tbsp cumin seed
3 tsp whole cloves 3 tbsp coriander seed

Method:

  1. Put spices in a heavy frying pans and heat over medium heat for 10 – 15 minutes, stirring until browned.
  2. Allow to cool and grind to a fine powder.

Tip: Garam Masala can be stored in a freezer for up to 3 months.
